    Tender greens simmered until soft, enriched with bacon fat and broth—a nourishing side dish that made the most of what the garden provided.

    Ingredients

    • 4 slices bacon, chopped
    • 1 large onion, diced
    • 1 lb fresh turnip greens, chopped
    • 2 cups water or broth
    • 1 tsp salt
    • 1/2 tsp pepper
    • Vinegar to taste (optional)

    Instructions

    1. Cook Bacon: Fry bacon in a large pot until crispy. Remove and set aside, reserving fat.
    2. Sauté Onion: In the bacon fat, cook onion until soft, about 5 minutes.
    3. Add Greens: Add turnip greens and water. Cover and simmer for 30-40 minutes until very tender.
    4. Season: Crumble cooked bacon back in. Season with salt and pepper. Add a splash of vinegar if desired.
    5. Serve: Serve hot with the cooking liquid (likker).
