
Farmhouse Tomato Soup

A simple, soul-warming tomato soup made from pantry staples. Serve with a thick slice of crusty bread for a nourishing midday meal that costs next to nothing and tastes like home.
Ingredients
- 1 can (28 oz) crushed tomatoes
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 2 tbsp butter
- 1/4 cup heavy cream (optional)
- 1 tsp sugar
- Salt, pepper, and dried basil to taste
Instructions
- Soften the aromatics: Melt butter in a heavy pot over medium heat. Add the diced onion and cook until soft and translucent, about 8 minutes. Add the garlic and cook for 1 more minute.
- Add tomatoes and broth: Pour in the crushed tomatoes and broth. Add the sugar, a pinch of dried basil, salt, and pepper. Stir to combine.
- Simmer: Bring to a gentle boil, then reduce heat and simmer uncovered for 20 minutes to let the flavors come together.
- Blend: Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer in batches to a blender.
- Finish: Stir in the cream if using. Taste and adjust seasoning. Serve hot with crusty bread for dipping.
