Chunky Meat Sauce for Spaghetti

    Serves 4–6

    A hearty, vegetable-packed meat sauce that comes together in one skillet. Chunky with peppers, mushrooms, and celery, it's the kind of dinner that feeds a crowd and warms everyone down to the bone.

    Ingredients

    • 1 lb ground beef
    • 1 medium onion, chopped
    • 2–3 green onions, sliced
    • 2 celery stalks, chopped
    • 1 yellow bell pepper, diced
    • 1–2 cups sliced mushrooms
    • 2–3 cups tomato sauce
    • Salt and black pepper, to taste
    • Garlic and Italian seasoning, to taste
    • 12 oz spaghetti
    • Parmesan cheese, for serving

    Instructions

    1. Cook the beef. Brown the ground beef in a large skillet over medium heat, breaking it apart as it cooks. Drain excess fat if needed.
    2. Add the vegetables. Add the chopped onion, green onion, celery, and yellow pepper to the skillet. Cook until the vegetables begin to soften.
    3. Add the mushrooms. Stir in the sliced mushrooms and continue cooking until they soften and release some of their moisture.
    4. Make it saucy. Pour in the tomato sauce and stir everything together. Season to taste. Reduce the heat and let the sauce simmer until the vegetables are tender and the flavours have come together. Add a splash of water if the sauce becomes thicker than you like.
    5. Cook the pasta. Meanwhile, cook the spaghetti according to the package directions. Drain.
    6. Serve. Spoon the chunky meat sauce over the spaghetti and generously sprinkle with Parmesan.
