
Hard-Times Honey Bread

A simple, resilient loaf that relies on the sweetness of honey and the patience of the baker. Perfect for gathering around a humble table.
Ingredients
- 3 cups (360g) all-purpose flour
- 1/4 cup (85g) local honey
- 1 tsp fine sea salt
- 1 cup (240ml) warm water (110°F)
- 2 1/4 tsp (1 packet) active dry yeast
- 2 tbsp melted butter (for brushing)
Instructions
- Bloom Yeast: In a stand mixer bowl, whisk warm water, honey, and yeast. Let sit for 5-10 mins until foamy.
- Mix & Knead: Add flour and salt. Using the dough hook, mix on low for 2 mins, then medium for 5 mins until smooth and elastic.
- First Rise: Place in a greased bowl, cover with a damp cloth, and let rise in a warm spot for 1-1.5 hours until doubled.
- Shape & Second Rise: Punch down dough, shape into a loaf, and place in a 9x5 pan. Cover and rise for 45 mins.
- Bake: Preheat oven to 375°F. Bake for 30-35 mins until golden. Brush with melted butter while hot.
