
Cast Iron Skillet Breakfast

A hearty, rustic breakfast cooked over an open fire. Simple ingredients come together in one pan for an easy morning at camp.
Ingredients
- 6 large eggs
- 1 lb bacon or breakfast sausage
- 4 medium potatoes, diced
- 1 small onion, chopped
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Prepare the fire: Build a hot bed of coals, placing a grate over the fire or setting your cast iron directly on sturdy rocks near the heat.
- Cook the meat: Add bacon or sausage to the skillet. Cook until browned. Remove meat and set aside, leaving the grease in the pan.
- Fry the potatoes: Add diced potatoes and onions to the hot grease. Cook until tender and crispy on the edges (about 15-20 mins).
- Scramble the eggs: Push the potatoes to one side. Crack eggs into the empty side, scrambling gently. Once cooked, mix everything together.
- Serve: Top with cheese if using. Serve hot directly from the skillet!
