
Baked Beans with Molasses

A hearty, economical dish that was a staple at church gatherings and family suppers. The slow cooking transforms humble beans into something deeply nourishing.
Ingredients
- 1 lb dried beans (soaked overnight)
- 4 oz salt pork or bacon, diced
- 1 onion, diced
- 1/2 cup molasses
- 2 tbsp brown sugar
- 1 tbsp mustard
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Prepare Beans: Soak beans overnight, then drain and rinse. Boil until just tender.
- Assemble: Transfer beans to a baking dish. Add salt pork, onion, molasses, sugar, mustard, salt, and pepper.
- Add Liquid: Add enough water to barely cover the beans.
- Bake: Cover and bake at 300°F for 2-3 hours, stirring occasionally and adding water as needed.
- Finish: Uncover for the last 30 minutes to brown the top slightly. Serve warm.
