    A hearty, economical dish that was a staple at church gatherings and family suppers. The slow cooking transforms humble beans into something deeply nourishing.

    Ingredients

    • 1 lb dried beans (soaked overnight)
    • 4 oz salt pork or bacon, diced
    • 1 onion, diced
    • 1/2 cup molasses
    • 2 tbsp brown sugar
    • 1 tbsp mustard
    • 1 tsp salt
    • 1/2 tsp pepper

    Instructions

    1. Prepare Beans: Soak beans overnight, then drain and rinse. Boil until just tender.
    2. Assemble: Transfer beans to a baking dish. Add salt pork, onion, molasses, sugar, mustard, salt, and pepper.
    3. Add Liquid: Add enough water to barely cover the beans.
    4. Bake: Cover and bake at 300°F for 2-3 hours, stirring occasionally and adding water as needed.
    5. Finish: Uncover for the last 30 minutes to brown the top slightly. Serve warm.
